Genetically, steelhead salmon and rainbow trout are the same species. However, the living conditions make a difference. If the fish grows in salt water, we’ve classified as a steelhead salmon. However, if it’s raised in fresh water, we’ve classified as rainbow trout. Our salmon is raised in saltwater, so it’s considered steelhead salmon. What’s the difference between smoked salmon and gravad lax?
Our Norwegian Fjord smoked salmon, known for its firm texture and rich flavour, is first dry salted, meaning that the fillet is covered with layer of salt that pulls moisture out of the fish. The fish is then carefully rinsed to remove traces of salt, and smoked over Alderwood using traditional Norwegian techniques. The result is smoked salmon with an appealing texture and distinctive smoky flavour. Authentic gravad lax is equally delicious. It is not smoked. Instead, it is cured using a blend of salt, sugar, white pepper and fresh dill. For more information, click here.
Is your salmon farmed? What are the farming conditions?
Most of our salmon is farmed, and we source our seafood responsibly from farms that meet certified standards. We believe that properly managed fish farms can be more sustainable than wild fisheries, which can face the threat of overfishing. Farmers can manage the health of the fish and the water: choosing feed that is sustainable and has been tested for heavy metal contaminants and other pollutants (which can be found in wild fish), precisely delivering the right amount of feed rather than excessive amounts that contribute to ocean sediment, limiting stress on the fish when it’s caught and transported, and testing for diseases that occur in the wild. Sustainable salmon farms mimic wild conditions by locating their farms in cold, pristine ocean waters and ensuring an optimal density of fish.

Where is your salmon caught and processed?
Most of our salmon comes from northern Europe where farming standards are highly regulated and ocean waters are protected. This seafood is processed close to where it is caught, ensuring optimal freshness and quality. We also work with carefully chosen suppliers in other parts of the world to bring a selection of responsibly sourced seafood to our customers.
How do you know your salmon are farmed responsibly?
We choose our partners carefully. We look for suppliers that follow proven industry standards. At a minimum, our farms are certified to GLOBAL G.A.P. standards. The GLOBAL G.A.P. Aquaculture Standard monitors compliance with laws, food safety, working conditions, and animal and environmental conservation. A variety of our products are certified by organizations like the Aquaculture Stewardship Council (ASC), Marine Stewardship Council (MSC) and ECOCERT Canada.
What is the difference between ASC, MSC, and ECOCERT Canada certification?
Aquaculture Stewardship Council (ASC) standards are for sustainable aquaculture. ASC is an independent, international, not-for-profit organization that manages the global standards for responsible aquaculture. Is your seafood kosher certified?

Many of our products are compliant with Halal requirements. We are in the process of more formal certification.
Is your fish or seafood organic?

What is the feed for organic products?
DOM Organics fish and seafood are certified organic by ECOCERT Canada. They are raised using all-natural, eco-friendly methods and are fed a diet of organic and sustainable ingredients, free of hormones, chemicals, preservatives, antibiotics, and genetically modified organisms.
At what temperature do I cook fish? How long should I cook your fish or seafood? How can I tell the fish is cooked through?

Does your frozen smoked salmon need to be cooked?
Our smoked salmon is ready to eat. Just follow the package directions: pierce the package and thaw overnight in the refrigerator, then serve and enjoy! Find some smoked salmon recipe ideas at our Let’s Eat page.
How long can I keep an opened smoked salmon package in the refrigerator?
Enjoy your smoked salmon within three days of opening the package.
Can I refreeze thawed salmon?
Technically, there is no food safety issue with refreezing thawed salmon. However, refreezing will change its texture, so we recommend enjoying it within three days of opening.
Why is there no best before date on your frozen products?
According to the Canadian Food Inspection Agency (CFIA), best before dates are not required on frozen products. Most of our frozen products have an 18-month shelf life, giving you plenty of time to store your purchase for future enjoyment.
